Ingredients
CILANTRO GARLIC DRESSING INGREDIENTS:
2 cups fresh cilantro (approx. 1 bunch)
1 to 2 garlic cloves
Juice of 1 lemon
2 tsp. honey or maple syrup
1/2 tsp. sea salt
1/2 cup olive oil
1/2 an avocado
SWEET POTATO INGREDIENTS:
3 to 4 medium sweet potatoes (or yams)
3 tbsp. coconut oil
3 tbsp. honey or maple syrup
1/2 tsp. sea salt
Directions

CILANTRO GARLIC DRESSING INSTRUCTIONS:

  1. In a high-speed blender or food processor, add all ingredients and pulse to combine.
  2. Add olive oil or a splash of water for desired consistency.
  3. Process until smooth and set aside.

SWEET POTATO INSTRUCTIONS:

  1. Preheat the oven to 425 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  2. Scrub your sweet potatoes clean and pat dry, or peel them.
  3. Cut into wedges, approximately the same size for similar cooking time.
  4. In a microwave-safe bowl, melt the coconut oil and honey.
  5. Place sweet potatoes in a large bowl and toss in the oil and honey mixture.
  6. Place on the baking sheet and sprinkle with salt.
  7. Arrange in a single layer, careful not to overcrowd the pan, and bake for 30 to 40 minutes until tender and caramelizing at the edges. Turn halfway.
  8. Drizzle on your dressing and enjoy!
